Green Peeled Pistachio Kernels (GPPK)
This product is mainly sold as food ingredient to ice cream, chocolate, confectionary and sausage industries. GPPKs in Iran are produced by picking the pistachios one month ahead of normal harvest time. This would give the kernels an enhanced pistachio taste and a very luxuriant green color.
The kernels are produced by mechanically shelling the closed nuts and then removing the seed coat by steaming and friction.
The dried peeled kernels would then be color sorted into 5 different shades of green to suit different industrial uses.
They could also be sorted by size according to customer’s requirements.
